In about an hour you can get pork belly with a soft center, a browned surface, and a clean smoke taste. Choose a piece with a meat streak, 3–5 cm thick: it heats through faster and doesn’t turn rubbery.

Soft and aromatic

Three pillars: proper salting, modest chips, and 80–120°C. Hard fire — fat runs out, the meat streak toughens. Too much smoke — heavy taste, not richer. Keep spices minimal: salt, pepper, garlic, bay, and smoke.

Temperature and time

Best range is 90–100°C. Guide: 3 cm — 45–55 min, 4 cm — 60–70 min, 5 cm — 75–90 min. Meat streak should hit at least 72°C. No thermometer: meat without a raw sheen, fat clearer at the edges.

Common mistakes

Too much salt, a wet surface, a thick chip bed, opening the lid every few minutes, and slicing immediately — the classics behind “it didn’t work.” Check after 45–50 minutes, not every ten.

Smoke should work like a seasoning, not the main ingredient — 1–2 handfuls of chips are enough for a kilo of belly.

What you need

For 1 kg of pork belly with a meat streak. Pieces 3–5 cm thick salt evenly and finish in about an hour to ninety minutes.

How to smoke it

Salt

Dry mix for 6–8 hours, or brine (60 g salt per 1 L water) for 4–6 hours. Pieces over 700 g should be cut down — otherwise the outside darkens before the center is ready.

Dry

30–40 minutes on a rack or towel. The surface should feel slightly tacky, not wet — smoke lays more evenly and the color stays cleaner.

Load and smoke

1–2 handfuls of chips, drip tray, belly skin-side down. Leave 2 cm between pieces. Once smoke appears, hold a steady 90–100°C.

Chill

Don’t slice right away. 20–30 minutes at room temperature, then 2–3 hours in the fridge in parchment — the texture firms and slices stay neat.
