A handful of smoking wood chips in an even layer on the bottom of the chamber. Alder, oak, beech or cherry — each adds its own shade of flavor and aroma.
Fish, bacon or meat — on the racks. Close the lid and pour water into the water seal.
Grill, campfire, gas or electric stove — depending on the smoker type. Keep it at 80–120 °C — models with a thermometer show it instantly.

Hot smoking happens at 80–120 °C: the food cooks and absorbs smoke at the same time, so the whole process takes 30–60 minutes. Cold smoking requires a separate smoke generator, 18–25 °C and several days. Our smokers are built for hot smoking — the fastest and simplest method for home use.
02 What is a water seal and why does a smoker need one?
The water seal is a channel around the smoker's rim that you fill with water. The lid sits in this channel, and the water creates an airtight lock: smoke stays inside and doesn't escape into the room. That's why you can use our smoker on a kitchen stove or balcony — no smoke in the apartment.
03 Which smoker should I choose for home use?
For the balcony, fishing and portions up to 4 kg — the compact Mini (450×250×250 mm). For everyday home smoking — Standard (400×300×300 mm). For a family and big loads up to 9 kg — Big Daddy (500×300×300 mm). All models have two rack levels: fish and meat smoke at the same time. Not sure — call us and we’ll advise.
04 Why does the lid have a thermometer?
The thermometer shows the real temperature inside without opening the lid. Hot smoking needs a steady 80–120 °C: lower — the food won't cook through, higher — it dries out. With a thermometer you see the temperature in real time and get the same result every time.
05 Which steel is better — AISI 304 or AISI 409?
Both are food-grade stainless steel that won't rust or affect taste. AISI 304 is the food industry standard at the best price. AISI 409 offers higher corrosion resistance, lasts longer with frequent use, and handles higher temperatures. Smoking a couple of times a month — 304 is enough. Smoking weekly and want it to last longer — go with 409.
06 Which wood chips should I use and how much?
The universal choice is alder: golden color and mild aroma for fish, bacon, chicken and pork. Oak — for red meat, beech — neutral flavor, cherry — for vegetables and cheese. One or two handfuls per session is enough. Every smoker comes with a free pack of chips — enough for 5–6 sessions.
